Because it's hard, virtually impossible, for Greyhounds to sit like a normal dog, they half lay/ half sit so they looking like the famous Sphinx. And Greyhound-ists (I might have coined a new Greyhound phrase there!) call this pose Sphinxing.
And it's true. They do it. Evidence:
I don't care what anyone calls it; all I know is he looks darn cute and so "serious" when he's in this position!
